MEMORANDUM FOR VII CORPS FOOD SERVICE REPRESENTATIVES
SUBJECT: FOOD SERVICE CONCERNS
1. From April 14th thru the 18th 1991, the 12th Medical Detachment
conducted inspections and interviews at the VII CORPS catering
facilities. Significant concerns from the inspections and
interviews are as follows:
a. The caterers do not have sufficient chiller space to
properly temper frozen meats. Food is being thawed at ambient
temperatures, sufficient chillers must be made available to the
caterers.
b. Due to the large amount of soldiers each caterer must
serve, meals are being prepared starting at 10:00. The food is
then stored in serving containers or Coleman coolers until 17:00 or
later. The internal temperature of the food at serving time has
been noted to be as low as 110 degrees Farenheight. Unit food
service representatives must check food temperatures prior to
serving. If the temperature of potential hazardous foods is not
greater than 140 degrees farenheight for hot foods, or less than 45
degrees for cold foods, the food should not be served to the
soldiers.
c. Caterers are partially cooking potentially hazardous foods
and then cooling the food to be reheated at serving time.
Potentially hazardous foods should be prepared and served without
reheating.
d. Some caterers do not have an adequate amount of coolers to
transport food. As a result the food is being shipped to the units
in containers covered with foil. Caterers have been seen
attempting to place spilled food back into containers. Unit food
service representatives should inspect the caterers vehicles upon
arriving at the unit. this will ensure that spilled food is not
being placed back into containers.
e. Several mess areas do not have hand washing devices
available to the soldiers. Units should ensure that each mess area
has an adequate amount of functional hand washing devices.
