SUBJECT: Preventive Medicine Assistance Visit to KKMC

          1. GENERAL: This enclosure covers specific findings for general
sanitation at KKMC. The areas looked at were Panzer Hotel Dining
          Facility and the wash rack.

          2. FINDINGS:

               a. Panzer Hotel Dining Facility.

                    (1) Overall, the dining facility sanitation was fair.
However, several existing deficiencies could result in diarrhea.

                    (2) Food was being stored uncovered in the
refrigerators. Potential hazardous foods, chicken, beef and hot
          dogs, were being refrozen.

                    (3) Thermometers were not being used in the
refrigerators and freezers to monitor internal temperatures.

                    (4) Dishes and pans were not being rinsed and sanitized
properly. A sanitizing solution was not being used.

                    (5) Latrines used by the food service personnel were
dirty. Food service personnel were cleaning the latrines by
          throwing water on them.

                    (6) Showers were dirty and located too close to the
mess hall. Drainage was poor for all the showers. People were
          urinating in the showers.

                    (7) The soakage pit was clogged and not functioning.
The pit is located too close to the dining facility. The odor
from the pit is very noticeable. Flies are feeding in the pit.

                    (8) A filled tank of liquid waste was uncovered and
          produced a strong odor.

                    (9) Food service personnel assigned to the facility did
not have thermometers available for monitoring food temperatures.

                    (10) Drinks were being stored in water between meals.
Contaminated water could leak into the container.

               b. Wash Rack. The only sanitation problem noted was the
ines need to be repaired and cleaned.
